Breakfast items don’t always have to be loaded with sugar and carbs. Try these simple protein packed muffins and experience being full and satisfied after a muffin instead of weighed down and tired!
- 2 large ripe bananas (brown spotted is best)
- 1 cup almond butter
- 2 eggs
- ¼ cup raw honey
- 1 scoop of your favorite protein powder
- 1 tbsp of almond extract
- 1 tsp baking powder
- Dark chocolate chips
Preheat oven to 400
Step 1: Put all ingredients, except the chocolate chips, into a food processor and mix.
Step 2: Use paper or silicone liners to line a muffin pan.
Step 3: Scoop batter into the muffin liners.
Step 4: Drop 3 or 4 chocolate chips on the tops of the uncooked muffins. Allowing the chips to sink into the batter.
Step 5: Bake 12-14 minutes.
Allow muffins to cool. Enjoy plain or with grass fed butter for extra decadence.
