I love to start my Saturday mornings with a cardio intense work out. Once I’m home I typically enjoy this protein packed Fiesta Omelet. Beans, avocado and 4 eggs allow this breakfast feast to be filled with healthy fats and protein that keep me full until lunch. Try out this simple recipe the next time you want a hearty breakfast!
- 3 egg whites
- 1 whole egg
- 1/4 cup of black beans
- 1/4 cup of pinto beans
- 1/4 tsp of cayenne pepper
- Salt and pepper to desired amount
- 1/2 cup of pepper jack cheese
- Handful of chopped cilantro
- Handful of chopped scallions
- 1/4 diced heirloom tomato (I love the yellow ones)
- Favorite hot sauce
- 1/2 sliced avocado
Step 1: In a large mixing bowl combine 3 egg whites, 1 large egg, salt, cilantro, green onions, black beans pinto beans and tomatoes together.
Step 2: Coat your pan in avocado oil and bring to medium heat.
Step 3: Pour egg mixture into the pan and let it cook on one side. Tilt the pan as it cooks and lift the sides so it cooks evenly. Cook through, then flip. Add cheese and fold into omelet shape.
Step 4: Top with hot sauce and sliced avocado!
