Finding a gluten free chocolate cake is hard to do. Finding one that’s packed with protein instead of processed ingredients is nearly impossible. Well, miracles do happen because I’ve got the recipe just for you! Try this delicious and healthy sweet treat and say goodbye to the after cake sugar-crash.
- 1 cup gluten-free oat flour
- 1/4 cup almond flour
- 2 1/2 scoops of your favorite protein powder
- 3 Tbsp unsweetened cocao
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup brown sugar
- 1 large banana, mashed
- 1/4 cup fermented coconut yogurt
- 1 large egg
- 1 egg white
- 1/3 cup almond milk
- 4 Tbsp Santa Barbara Chocolate Chips
Step 1: Preheat oven to 350 degrees and generously coat an 8×8 cake pan with coconut oil.
Step 2: In a large bowl, combine oat flour, almond flour, protein powder, cacao powder, baking soda, salt, and brown sugar and set aside.
Step 3: In a medium bowl, mash banana until creamy.
Step 4: Add in yogurt, egg, egg white, and almond milk and mix until combined.
Step 5: Add wet ingredients to large bowl and stir until just combined. Batter will be thick.
Step 6: Pour batter into prepared baking pan and sprinkle with chocolate chips.
Step 7: Bake for 17-20 minutes, or until toothpick inserted in middle comes out mostly clean.
