Not all recipes are created equal! This recipe for Pozole Verde includes gut healthy ingredients such as bone broth, garlic and avocado oil. Incorporating these items into your dishes can support microbiome health and satisfy the strong flavor profile you are craving.
- 8 cups bone broth
- Shredded chicken (amount desired)
- 1 tablespoon avocado oil
- One 25-ounce can of hominy
- 1 tablespoon cumin
- 4 cloves garlic, minced
- ¼ yellow onion, sliced
- 1 cup of beans of choice
- 2 cups red cabbage, shredded
- 2 poblano peppers, sliced and deseeded
- 5 tomatillos, chopped
- 1 jalapeño, sliced and deseeded
- Lime juice
- Sliced radishes
- Sea salt to taste
- 1 teaspoon pepper (to taste)
Step 1: In a large pot over medium heat, sauté avocado oil, garlic, tomatillos, jalapeño, poblanos, cumin, salt and pepper until veggies are soft, about 10–15 minutes.
Step 2: Use an immersion blender and blend until smooth.
Step 3: Pour mixture back into the pot and add remaining ingredients, including the shredded chicken.
Step 4: Bring mixture to a boil over high heat and then simmer on low for 10–15 minutes
Top with cabbage, cilantro, radish, lime juice and finely chopped onion and serve warm.
