Gluten Free Sweet Potato Soup

Sweet potatoes are good for the soul! They have high levels of magnesium in them, which can help combat stress, negative feelings, and inflammation. Turmeric supports the fight against inflammation, and ginger supports gut health. This mineral-rich vegetable also makes for a satisfying lunch option, which will slow you down in more ways than one.

Ingredients

  • 1 tablespoon coconut oil
  • 1 small onion
  • 2 teaspoons turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon coriander
  • 1 pound sweet potatoes
  • 2 cups organic gluten free chicken broth
  • 1 ½ cups water
  • 1/3 cup coconut milk

Directions:

Step 1: Heat a saucepan over medium heat. Add the coconut oil.

Step 2: Add the diced onion. Sauté until translucent and soft. This takes about 6 minutes.

Step 3: Stir in the turmeric, ginger and coriander. Let these spices toast for a minute.

Step 4: Peel and cube the sweet potato then add it to the pot along with chicken broth and water.

Step 5: Bring to a boil, reduce to a simmer, and let cook until the sweet potatoes are tender.

Step 6: Once the sweet potatoes are tender, puree the soup with an immersion blender. 7. Add coconut milk.

Serve warm and find a cozy spot to savor.
