Eggs with Turmeric and Garlic Spinach

Why not kick off the day with a dish created to boost the immune system and help reduce inflammation. This simple recipe will have you feeling strong (hello popeye), full and ready for whatever the day brings! Feel free to add avocado on top of this recipe to add some extra essential fats!

Ingredients

  • 1 Tablespoon olive oil
  • ¼ cup onions, diced
  • 4 cups fresh spinach (make sure it’s rinsed and dried)
  • ¼ teaspoon turmeric
  • 2 cloves garlic, minced
  • 2 eggs
  • Himalayan pink salt and pepper to taste

Directions:

Step 1: In a medium frying pan heat the olive oil on a medium heat and add the garlic and onions. Saute for about a minute and then add the spinach.

Step 2: Stir often and add the turmeric, salt and pepper to taste. Cook the spinach until it is mostly wilted.

Step 3: Once the spinach is wilted, create a small well space in the middle of the pan and reduce the heat slightly. Add a little olive oil if needed and crack the eggs into the space.

Step 4: Cook the eggs for around 3 – 3 ½ minutes until the egg whites are cooked but the yolk is still soft.

Serve immediately.
