Ever looking for a delicious brunch idea that is restaurant quality but quick and easy to make at home? Well, look no further. These baked avocados with egg and basil are full of healthy fats and protein, and the aromatic qualities of fresh basil make for a recipe rich in vitamin C, K, calcium, magnesium, Omega 3 fatty acids and iron.
- 2 x large avocados
- 4 x small eggs
- Sprig of fresh basil finely, chopped
- Salt and Pepper
- Olive oil
- A few chopped chives
- A few cherry tomatoes, sliced
- Chilli flakes (optional)
Step 1: Preheat your oven to 400F
Step 2: Cut your avocados in half and remove the seed. Then scoop a little more of the avocado flesh out, creating a larger well for the egg to sit. Place avocados on a baking tray and drizzle with a touch of olive oil.
Step 3: Place a little chopped basil in the well of the avocado and then crack the eggs into the avocado. Season with salt and pepper, and chilli flakes if desired, and sprinkle more basil on top of the egg.
Step 4: Bake for about 15 minutes or until the egg is to the consistency you like. Garnish with sliced tomatoes and chives and serve immediately.
